Pizza Tour guest Tyler Smith brought an awesome infrared camera on the tour a few months again and sent me all these cool images of the pizzas we ate and the ovens we inspected. Here’s a shot of the pizza at Lombardi’s showing the hot spots (white) and the cooler spots (red). This confirms that cheese is the culprit for pizza burn!
